Recipe: Freezer Breakfast Burritos

Breakfast burritos are a staple in our home. The kids love them, and so do mom and dad! The best part about breakfast burritos is that they fit any budget if made in bulk AND can be made ahead of time and frozen. Since all the contents are fully cooked, they are a quick heat and eat item in the morning. This recipe can be tailored to your taste, including intensity of salsa, type of cheese, pork or turkey sausage, ham or bacon…you get the picture.

Breakfast Burrito Recipe

2 packages of 20 small flour tortillas (40 shells)

2 dozen eggs, scrambled

1 package frozen, shredded potatoes

2-3 pounds of cooked sausage

1 package of finely shredded cheddar cheese

1 jar of salsa

Cook sausage and scramble eggs, then mix with remaining ingredients. Spoon into tortillas, roll, and wrap in wax paper. Freeze, heat, and eat!
