This was the ultimate “cheap” meal that tasted like a million bucks. I got the pork roast on a B1G1 sale a while back, plus a coupon. I maybe paid a couple dollars for it.
I used some homemade apricot jam I had in the fridge, given to me by my mother-in-law. I mixed about 1 cup of jam with some dry mustard, sea salt, a little brown sugar, thyme, and fresh ground black pepper.
I roasted the pork at a lower temp all afternoon (about 300), and basted it every half hour with the apricot mixture. I let it rest for at least 30 minutes, and then used an electric knife to shave it thin. I used the pan drippings to spread over the cut meat.
We had delicious pork sandwiches with the leftovers the next day.
I have to admit that altering our family’s #1 favorite recipe in anyway was difficult. I was hesitant to replace ground pork with ground chicken. However, we’ve really enjoyed ground chicken lately, and it’s so lean. I couldn’t resist giving it a try in our authentic, Chinese Dumpling Recipe. I can honestly say that I’ve sampled dumplings all over China and this recipe is absolutely “spot-on”. I have even taste tested it with a three different Chinese friends who all gave me the thumbs up.
It’s no secret I love to cook. I have posted many of my favorite recipes on this site, and I jump at any opportunity to cook for family and friends. I recently had the chance to teach an ethnic cooking class this past Friday night, and I had a blast.
